Cochinita Pibil

It was the best taco I had ever eaten. At the small taqueria in San Cristóbal de las Casas, the only filling was cochinita pibil: a day’s worth of suckling pig meat braised with smoked habanero chilies and served from a huge stainless steel vat. Accompanied by a palette of homemade sauces of all levels of spiciness, the lowest of which is already considered hot in Europe. The first time I tasted this dish, I was already hooked – I went there a whole five times during my time in the city.
